Quorn-aurajuustopasta / Quorn and blue cheese pasta

Modified from this recipe to vegetarian and more spiced. I'm not a huge fan of blue cheese otherwise but it fits in this pasta like a nose on the face. The sauce has so much flavour that you can replace chicken with any type of faux meat. However, I found quorn to be incredibly close to chicken after being flavoured with soy sauce and curry. And of course the blue cheese has to be Aura cheese!

Ingredients (4 portions)
  • 1 block of blue cheese (Aura, 170g)
  • 250-300 g pasta
  • 300 g quorn, chicken or any veggie "chicken"
  • 2 dl cooking cream
  • 1 small onion
  • soy sauce
  • 1 tsp honey
  • 2 tsp chicken spice (broilerimauste) or curry
  • salt, pepper
Put pasta water to boil and make the sauce: start by sautéeing onion in oil, then add quorn and a splash of soy sauce. Fry until golden and add some more salt and pepper. Add the chicken spice or curry and fry until fragrant. Add cream and blue cheese and let melt, cooking it until the pasta is done; about 15 minutes. Combine and serve.

Ainesosat (4 annosta)
  • 1 pala sinihomejuustoa (Aura, 170g)
  • 250-300 g pastaa
  • 300 g quornia, kanaa tai muuta vegekanaa
  • 2 dl ruokakermaa
  • 1 pieni sipuli
  • soijakastiketta
  • 1 tl hunajaa
  • 2 tl broilerimaustetta tai currya
  • suolaa, pippuria
Laita pastavesi kiehumaan ja valmista kastike: aloita kuullottamalla sipuli öljyssä, lisää quorn ja tilkka soijakastiketta. Paista kullanruskeaksi ja lisää suolaa ja pippuria. Lisää broilerimauste tai curry ja paista vielä lisää. Lisää kerma ja sinihomejuusto ja anna sulaa, anna kuplia kunnes pasta on valmis eli noin 15 minuuttia. Yhdistä pastaan ja tarjoile.
