Shanghai tacos

This is the megapopular dish of a Finnish-Vietnamese restaurant called Lie Mi that other restaurants and recipes try to emulate. According to this article the original recipe contains also honey yogurt, but I didn't try that. The end result is very close to the original thing!

TO NOTE WHEN FRYING: never let water get into the hot oil as it will spray. Do not turn the heat all the way up - test with a wooden spoon. I used 7/10 on the heat setting. Other than that, frying the shrimp is easier and faster than you think. You do not need to fill the whole pan with oil, just a few centimeter layer is enough because the shrimp are small and you cook one side at a time.


ASSEMBLING

  • 4 spring onion paratha or similar taco
  • Sprouts
  • Salad mix
  • Lime juice
  • Cilantro / coriander
  • Hoisin sauce
  • Sriracha mayo (or mix 1 garlic clove, mayo, sriracha)
  • Thawed giant shrimp, around 12-16 depending how hungry you are

FRYING THE SHRIMP

Bowl 1

  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Flour
  • Water
  • 1 egg

Bowl 2

  • Panko crumbs

For bowl 1: eyeball the spices

If you use frozen parathas, prepare them on the pan first and set aside.

Heat a nice amount of canola oil on pan (2cm thickness, approx) until a wooden spoon inserted has bubbles around it (175C - ish). Dip each melted shrimp first in wet bowl 1, and then in panko flour, then put it on the pan and turn after around 2-3 minutes. You will see when one side starts to brown. If they brown too fast, you can reduce the heat a bit. Scoop them out on a plate when they are ready.

Assemble! Paratha, hoisin sauce, salad, sprouts, 3-4 shrimp per taco, coriander, dash of lime juice, and sriracha mayo.

  • Sriracha-majoneesia (tai sekoita 1 valkosipulinkynsi, majoneesi, sriracha)
  • sulatettuja jättikatkarapuja, noin 12-16

Kulho 1

  • Pankojauhoa

Kulhoon 1: silmäile mausteet

Jos käytät pakastettuja paratha-lättyjä, paista ne ensin pannulla.

Kuumenna reilu määrä rypsiöljyä pannulla (paksuus noin 2 cm), kunnes puulusikan ympärille tulee kuplia (175 C - ish). Kasta jokainen sulanut katkarapu ensin märkien ainesten kulhoon 1 ja sitten pankojauhoon, laita se sitten pannulle ja käännä noin 2-3 minuutin kuluttua. Käännä kun alapuoli alkaa ruskistua. Jos ne ruskistuvat liian nopeasti, voit vähentää lämpöä hieman. 

Kokoamiseen: Parathat, hoisin-kastiketta, salaattia, ituja, 3-4 katkarapua tacoa kohden, korianteria, limemehua ja sriracha-majoneesia.
